If you’re looking for a delicious way to use apples picked at your local Eckert’s, we have a great idea for you. Make these easy apple pie bars for a Sunday dinner or even an unexpected weeknight treat. They’re so easy, you’ll be able to whip them up in a flash.
If you’re wondering what kind of apples to use, look for apples that hold their shape, like Granny Smith — a go-to choice for pie — and its cousin, golden delicious. Other great choices are Jonagold, which are tart with a honeyed sweetness, as well as Honeycrisp and Braeburn.

Ingredients
- 2 1/2 cups flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 cup shortening
- 1 egg seperated
- 2/3 cup milk
- 1 cup crushed corn flakes
- 1 teaspoon cinnamon
- 1 tablespoon flour
- 2 tablespoons milk
- 1 cup powdered sugar
Instructions
- To prepare pastry, in a large mixing bowl, combine flour, sugar, salt and shortening and mix to form a stiff dough.
- Place egg yolk in a measuring cup; add enough milk to equal 2/3 cup and blend. Stir into pastry mixture. Divide dough in half; roll out one piece into a rectangle to fit a cookie sheet or jelly roll pan. Sprinkle dough with corn flakes.
- Core and peel apples, and then slice them. Place the apples on top of the corn flakes.
- In a small bowl, mix sugar, cinnamon and flour; sprinkle over apples.
- Roll out remaining pastry and place over apples; pinch edges together. Beat egg white until stiff; spread over top crust.
- Bake at 375° F for 1 hour.
- To prepare glaze, in a small bowl, combine milk and powdered sugar and blend until smooth, thin glaze forms. Drizzle glaze over top of apple bars while still warm. Enjoy!
