Story Behind Our Beloved Apple Goodie Recipe
Apple Season is drawing to an end at our farms, but we will still have plenty of our homegrown apples for sale in our Belleville Country Store even after pick-your-own ends. Our new cookbook offers so many delicious recipes, it’s hard to choose which one to make next. As I was browsing through the cookbook, I came across the Apple Goodie recipe and decided to go with it – all because of the story. When Chris & Angie Eckert lived on the East Coast, years ago, they visited another family-owned apple farm – those owners gave the Eckert’s their favorite apple recipe – you guessed it…Apple Goodie. Now it’s an Eckert Family Favorite too!
Apple Goodie Recipe
For the Goodie
Goodie Ingredients: 5 cups apples, pared & sliced 3/4 cup sugar 1/2 tsp. ground cinnamon
Oatmeal and Brown Sugar Topping
Topping Ingredients: 3/4 cup oatmeal 3/4 cup packed brown sugar 3/4 cup flour 1/4 tsp. baking powder 1/4 tsp. baking soda 1/8 tsp. salt 1/2 cup butter or margarine
How to Make the Perfect Apple Goodie Recipe
To Prepare Goodie: Arrange apples in a 9-inch square baking pan. In a small bowl, mix sugar and cinnamon together; sprinkle over apples and mix well. Spoon oatmeal and brown sugar topping over apples and pat firmly. Bake at 400 degrees F for 30 to 40 minutes until a crust is formed. Serve hot or cold. Serve with Eckert’s homemade custard.
Crafting the Oatmeal & Brown Sugar Topping
To Prepare Topping: In a mixing bowl, combine oatmeal, brown sugar, flour, baking powder, baking soda, and salt; cut in butter and work with fingertips until mixture is crumbly.
